waffles

Happy National Waffle Iron Day!

I love waffles. So celebrating this holiday was lovely. We had waffles with the vanilla sauce I made earlier this week.




Because I've worked too many hours this week Paul was the first one to go to work this morning, that was a change! I actually only went to work for 2 hours for a meeting and turned around and came home! But I got to go to lunch with Paul and his co-workers and that was really fun. Today was his last day at the Children's Hospital - he will be going on to a new client after the 4th of July holiday.

Anyone following America's Got Talent? All I've got to say is there are some amazingly talented people on that show and they definitely chose a lot of the wrong people to head on to New York. Really unfortunate.

sports sponsorship

The Orlando Magic NBA team sent us cookies yesterday. How cool is that? I got a cookie from the Orlando Magic. And it was delicious. They had ones shaped like basketballs, basketball shoes, and ones with their logo on it. So cute!


I love being able to work with sports. It has been my dream for a long time to work in/with sports and I got to do it in college and am getting to do a little bit now! It's really fun.

Speaking of sports, last night we got to go to a Texas Rangers game with Paul's work. It was so fun! I haven't been to a major league baseball game since high school and haven't ever watched the Rangers, as far as I can remember.

(Beth, don't read this part.) I really am not a baseball person. I think it's really boring especially since things only happen about half of the time. Most of the game you're just waiting..and waiting..and waiting for something to happen...ANYTHING to happen!

But we had a great time talking to the other interns, mostly about the NBA draft and playing basketball on Saturday, and eating the yummy free food. And the Rangers won, 7-6.

It makes me so happy seeing Southwest signage and advertising different places. Mostly because I kind of have something to do with some of it! Sometimes..

The one thing I will give baseball, they do have beautiful stadiums. 


Hopefully I'll continue tot get to work with sports or in sports. It will be so fun seeing the things I work on roll out for the rest of the season. I love sports. I love the atmosphere, competitiveness, and industry in general.


Even if it's baseball.

WHAT DAY IS IT?

I have found a lot of "holidays" to celebrate today.

First, Happy Paul Bunyan Day!

 What? Yes. Paul Bunyan Day. From the tall tale. The big guy with the blue ox that "invented" logging. How do you celebrate this? Chop down a tree?

It's also Insurance Awareness Day!

I've never really had to do much with insurance besides giving people the card at the doctor's office. Hopefully it stays that way! I know that having good insurance is important, especially medical. That is one super important thing when looking for a full-time job. I have heard a lot about insurance from my very smart, insurance working brother-in-law (the one with the super cute baby.)

And now for my favorite..

HAPPY INTERNATIONAL CAPS LOCK DAY!

I thought about making this whole post in caps but decided that would be super annoying. I think it's really funny when people don't realize that CAPS LOCK implies yelling and use it to emphasize words when some italics or underlining, or even bolding would suffice. CAPS LOCK NOT NECESSARY. Do you read emails different when they have a lot of caps lock in them? I do. Sometimes it makes me a little stressed.

But today, enjoy CAPS LOCK. Use it a few times. Gently :) And enjoy some laughs below..

so hot, so cool

First, I kept the pudding from yesterday in the fridge all night and it definitely thickened up. Ate it today for lunch and it wasn't too bad. I still like the instant pudding better. 


Happy National Sunglasses Day!
I think sunglasses are so much fun. I've only ever owned one pair at a time and the most I've ever spent on a pair is $10. These lovely shades from H&M didn't cost more than $7. I looked at some pairs that were over $200 and ADORABLE but couldn't get myself to pay that much. So I went from one extreme to the other!


Someday I want to own a pair of Tory Burch or Tiffany sunglasses. We'll see how long it takes me to have the courage to pay for them. 

I really like this outfit I wore today. The striped shirt was a little long for my body but I'm working on finding a better shirt length to layer. It's hard for me because I have a super short torso so I try to wear longer shirts to hide that but too long and it has the reverse affect. Any suggestions?

 I LOVE colored blazers. If I didn't live in Texas and it wasn't 100 degrees everyday I would definitely have more. I also haven't worn my hair curly like this in a LONG time so it was a fun change! Part of it is the difficulty with the humidity and I haven't had strong hairspray until just recently. It worked pretty well!

Can I just say I am really enjoying crispy, Costco grapes? Everyone should eat some. Southwest folks, I bring them almost every day and I'm happy to share.

In other good news, they fixed Shorecrest Drive so now, if I hit every green light, it can take less than 4 minutes to get from parking garage to parking lot at Southwest. It's a beautiful, beautiful thing.

Stay cool and wear some snazzy sunglasses today. But take them off inside or you'll just look silly.

pudding fail.

Remember the FIRST blog post I had published on Southwest's blog? I just posted the follow-up :) Click HERE to read the story of Gary in San Francisco. Writing for Southwest is super fun. I'm enjoying it.

Today is a super wonderful holiday . . National Chocolate Pudding Day!


I am a huge fan of the cheap, store bought chocolate pudding. Never fails. But today I got adventurous and made it from scratch. Unfortunately . . didn't work so great. It was more like a chocolate gravy. It tasted ok but wasn't the greatest texture.

The best way to make chocolate pudding is to mix a packet of chocolate pudding powder with a can of sweetened condensed milk and a small tub of whipped topping.

Now that's some awesome chocolate pudding, my friends. Next time.

Airplanes!

Denver was a party but definitely resulted in some sleep loss. Still recovering.

Today is National Strawberry Parfait Day!

Because we have been busy the last 2 weekends, we haven't done much food shopping. Meaning we have little food in the apartment. No eggs, cereal, milk, yogurt, fresh fruit . . so that obviously meant pancakes for breakfast! We are still going through the pancake mix we got for our wedding.

In honor of National Strawberry Parfait Day we decided to make our own version of a Strawberry Parfait - with our pancakes!


I tried to put it in a cup to make it look like a real parfait but was much easier to layer it on the plate. Pancakes, frozen strawberries, and homemade vanilla sauce. So delicious.


The vanilla sauce was super simple:

1 cup half and half
1/2 cup sugar
1 tablespoon flour
1/4 cup butter
1 teaspoon vanilla extract

Just stir everything minus the vanilla in a sauce pan and heat SLOWLY while stirring constantly. Let it come to a boil for about 3 minutes while still stirring, allowing it to thicken in the pan. Make sure you stir it and heat slowly or else it will get chunky and gross. Remove from heat and stir in the vanilla. If you keep it in the hot pan it will also get lumpy so I would suggest moving it to a different dish. But it is a great alternative to syrup.

I'm all about the simple and easy when it comes to cooking.

At work today I got to go on a tour of the airplane hanger where they do all of the maintenance. It was really interesting to see a completely gutted plane and how they work on them.

Fairies.

Happy International Fairy Day!

When it comes to Fairies, obviously my favorites are the ones in Disney movies.



Tinker Bell is probably my favorite. 

That's all I have for today. My sweet husband watched Peter Pan with me while we ate hamburgers and chocolate. And now we are tired.

pink and denver

My apologies for not posting yesterday . . it was quite a busy one with no computer access after 10 am. But, it was National Pink Day!


I've never been a huge pink girl, more of a blue fan, but it's definitely fun to play with and wear every once in a while. It would have been nice to have yesterday be national blue day because I would have posted blue balloons to celebrate a new nephew! He's super cute. Congrats Pete and Lora!

We get to meet him in August!

On Friday we got to have some fun with a few of the other couples in our ward. It was great getting to know them a little more and feel a bit more involved in the ward. There were definitely lots of laughs and lots of yummy food. Including chocolate pie - my favorite.

Saturday was my first business trip! And Paul got to come with me, which was great. I'm not sure I would've had nearly as much fun wandering around by myself. We showed up at the airport in the morning and made our way to Denver, Colorado. I cannot wait until the Wright Amendment goes away next year and Southwest can fly directly out of Love Field . . it will be a glorious day.

Back to the trip. I went to Denver to see a concert at Red Rocks Amphitheater so that I could have the experience and write about it in conjunction with a concert we are doing. We are a proud sponsor of Red Rocks and this was a way to promote it. Again, so grateful Paul got to come.

 This kid was so funny. He thanked me like 10 times for letting him sit with us and sit by the window. He fell asleep with his eyes half open and mouth wide open and a little bit later he ended up sleeping on my shoulder. It was pretty cute. When I shook him awake when we landed in Denver he shot out of his seat and was so startled. So funny.

Skyline Park is where Southwest has a skating rink in the winter, basketball court in the spring, and now it's used for outdoor concerts and movies. It's on the other side of the park than I'm at in this picture. 
 After a delicious dinner with Lindsey, a that works with Red Rocks and their sponsors, we headed out to the mountains. The scenery here was incredible. 
 Like the pink shirt? I was rocking my National Pink Day attire.
 The venue doesn't fit as many people as lots of other places but with the view and scenery, any concert would be amazing here.

 The amphitheater is literally built into the rocks. Whoever designed it is genius. 

We saw Wilco and Dr. Dog. It's not my typical listening style but just being there was amazing. I actually really liked a few of Dr. Dog's songs. Unfortunately, now my hair and clothes all smell like, well, whatever everyone in the arena was smoking. Pretty gross.

I love Southwest! Seriously, what other internship would give you this kind of experience? 
This might have been my favorite part. Southwest is a huge sponsor and has a branded theater. There are even airplane seats in it that people can hang out in and watch movies.
So many big, famous bands have played here.


It was such a fun time! Unfortunately a late night and early next morning to travel home were a little rough but we made it. Look for my blog post / contest about Red Rocks coming soon!
