we can watch!

First, a shout out to my awesome cousin Derek and his cute family for loaning us their old TV antenna so we can watch the Olympics. It is pretty amazing. We got to have dinner with them and my cousin, Jake, on Sunday. Good catch-up time!

The dessert I made actually turned out really good. Easy too!

My job search continues. I was sad to turn down a job offer I received but after lots of prayer and talking to people, I just knew it wasn't what I was supposed to do.

But here's what I wore including a skirt from my NYC trip and my wedding shoes :)

Chocolate Dream Bars:
(Adapted from a recipe by Peggy)

Ingredients:

1  package chocolate cake mix (I used devil's food)
1 egg
1/2 cup vegetable oil
1 (14-ounce) can sweetened condensed milk
1 cup (6-ounces) semi-sweet chocolate chips (I only used 3/4 cup and it was great)
1 teaspoon pure vanilla extract
1/4 teaspoon salt

Preheat oven to 350 F. Line a 9 x 13-inch baking pan with non-stick foil.

Empty cake mix into a very large bowl and make a well in the center. Pour the egg and oil into the well. Using a mixer on medium speed, blend until the mixture is combined to a crumbly texture (like wet dirt). Remove 1 cup of the mixture and set aside for use later in the recipe.

Pour remaining crumb mixture into the bottom of the foil-lined baking pan. Press firmly into an even layer.

In a small saucepan, bring the sweetened condensed milk slowly to a simmer. Turn off heat and immediately stir in chocolate chips, vanilla extract, and salt. Stir until chocolate is melted and all is combined. Pour chocolate mixture evenly over the crumb layer in the pan.

Sprinkle reserved 1 cup of chocolate crumb mixture evenly over the fudge layer.

Bake about 25 minutes until the edges are firm. Place on a rack and let cool completely before adding the frosting.

I had some leftover canned frosting that I needed to use up so I whipped it with some cream cheese and powdered sugar to make my frosting but you can use whatever thick buttercream/cream cheese frosting you want. Just make sure it's not runny.

Pour into a zip-top plastic bag, press out all the air, and seal. Snip a very tiny bit of the corner from the bottom of the bag. Use as a pastry bag to drizzle frosting in a decorative pattern over the top of the brownie dream bars. Let brownies sit at room temperature for about an hour before cutting to let the frosting firm up.

Happy Birthday to my sweetheart..He's a whopping 24 years old today!

I love this guy so very much.

He puts up with me when I decide to be crazy and holds me whenever I want him to (almost).

He got some golf shoes for his birthday and a glow-in-the-dark puzzle for his birthday.

He got to play his favorite sport, basketball, with some friends and go out for lunch today. Then it was us time! We went to Medieval Times for an awesome Knight-filled evening. I thought it was appropriate. And last night we saw The Dark Knight Rises so our whole weekend was just all about the Knights! Gotta love it.

Happy 4th of July!

I woke up this morning and got a call telling me that my flight to Houston for my business trip was cancelled. Lovely way to start the day, yeah?

Happy 4th of July!

After having some delicious breakfast at Mecca (holy huge cinnamon rolls!) I headed over to the airport to catch an earlier flight to Houston. After some taxi problems and wrong directions, I finally made it to the Southwest VIP area at Freedom over Texas.

So cool. And when I say cool, it was actually really hot and humid.

 Of course we have to have our famous peanuts and pretzels..

There is just something about being at an event that you know the company you work for sponsored and it is branded with its logo like crazy. You just feel so cool! I went to town taking pictures, listening to music, and then turned around and went home! Easy trip. And as I was heading out it started to drizzle..hopefully it didn't pour down there! The clouds didn't look to promising.

 The best part? Coming home to this amazing man.

We hung out tonight with our good friend, Ahmad, and had an awesome BBQ and discovered that his roof is the BEST place to watch fireworks. We got to see three different shows very clearly, and with no traffic! After some ice cream and card games, we called it a night.

this is how we do it

First . . .

I got published! Today I had a blog post on Southwest's Nuts About Southwest blog and on the company website. It is very exciting :)

It was definitely a highlight of my day.

What else happened today?

The marketing interns worked together to clean out the moldy, smelly, bacteria-infested fridge. There was definitely more than one thing growing in there, including a pepper that was probably one green . . . gone black. Yes, gross. Marketing department - you're welcome.

I got to walk around the building where all of the pilots get trained today. They have all of these simulators and pieces of airplane everywhere for different training exercises. It's really cool and we got quite the tour. Can't wait to see it all in action in July . . stay tuned :)

Today was also Southwest's 41st Birthday! Few companies know how to celebrate quick like Southwest does. While I don't participate in the alcohol part of the festivities, there is always lots of music, dancing, food, drinks, and loads of people.

Paul got to come celebrate with us after he got home from work. While talking to a few other employees and a few Mormon comments they realized that 4 out of the 6 in the circle were, in fact, Mormon. Quite a funny moment. 

So instead of taking a picture with all of us and beer . . . here is us with our lovely refreshing water.

Tomorrow is Friday! And just a hint . . wear flip flops tomorrow!!

We like to P . . uzzle . . arty . .

First, for the puzzle part.

Since right before we got married, Paul and I discovered that we like to puzzle. In our home, our artwork on the wall consists of puzzles that we have framed. 

  

And since we've been here, we've completed two more. : )

Now for the party part.

We've had fun going to see the few cousins I have around here. Here's Paul and one of his new little buddies. 

My cousins have the cutest boys! Paul loves hanging out with them.

 The young men in our ward washed cars for a fundraiser.  They were so gross after the drive from Utah to Texas..lots of bugs that got very stuck . .

They look much better now.

We are happy here : )
